Our roasting philosophy
We roast each coffee to its maximum potential, preserving the flavors characteristic of their origin. Our blends are designed to be layered and complex. We have developed a unique roast-profile for each coffee on our menu, that will bring out its pleasing flavors and allow the taster to enjoy the most out of the coffee. We don't follow industry trends or fads, but through successful trials and experience have developed a roasting philosophy that stands the test of time. Just like coffees can be roasted too much creating harsh and muting smoky flavors, coffee can be under roasted not giving it a chance to develop the maximum level of pleasing flavor compounds, leaving the drinker with shocking levels of acidity and astringent-underdeveloped grassy flavors, hiding any unique origin characteristics. There is no 'one-way' to roast coffee, however there are lesser outdated ways, and ways lacking philosophy in common practice.
When will my coffee be shipped?
Orders received by 1 pm EST will ship the following roast day. Orders received Friday-Sunday will ship on Monday (unless there's a holiday).
How long does shipping take?
Depending on the method of shipping you choose at check out, it could take 1 to 4 days depending on where you live in the country. Keep in mind, coffee freshness is very important to the quality, so spending a little extra for faster shipping will likely pay dividends in improved flavor.
How should I store my coffee?
Coffee should be stored away from light, heat, and moisture. So please store the beans in an air tight container and keep them in a cool, dry place.
How should I brew my coffee?
However you like! Use your preferred brewing method and experiment with ratios until you find what you like. You might prefer a Chemex or opt for a Beehouse, though you'll likely have success with a Clever Dripper, French Press, or Aeropress. The key is to experiment with every method until you find what is the preferred method for you, and then perfect your skills until each cup is consistently brewed to your liking. The Coffees on our menu are universal and can be used in any device, hot or cold.
